Prof. Jiangtao Zhou is the Presidential Young Professor (PYP) and tenure-track assistant professor in the Department of Food Science and Technology (FST) at National University of Singapore (NUS) since 2025. Prior to this, he was a postdoctoral researcher and then promoted as oberassistant scientist in the Institute of Food, Nutrition and Health (IFNH) at ETH Zürich since 2020. Dr. Zhou obtained his PhD degree from Swiss Federal Institute of Technology in Lausanne (EPFL) in Switzerland, where he obatined the prestigious EPFL Thesis Dsitinction Award. Dr. Zhou’s main research interests include the protein self-assembling and food protein nanofibrils, including sustainable protein-based nanofibrils, the fundamental mechanistics of protein aggregation at molecular and mesoscopic levels, and their applications in nutraceutical delivery, as well as in biomedical and functional materials.
Dr. Zhou has published more than 50 publications in the prestigious peer-reviewed journals, such as Nature Communications, Advanced Sciences, Advanced Materials, ACS nano, Nano Letters, etc. He has served as peer reviewer for journals including Nature Communications, Angewandte Chemie, Food Hydrocolloids, Food Chemistry, International Journal of Biological Macromolecules, etc. He also serves on editorial boards including the associate editor of Frontiers in Food Science and Technology, Frontiers in Soft Matter, guest editor of MDPI Gels.
