Jiangtao Zhou is a Presidential Young Professor (PYP) and tenure-track assistant professor in the Department of Food Science and Technology (FST) at National University of Singapore (NUS), appointed the head of the Food Materials and Nanotechnology Lab since 2025. Dr. Zhou obtained his PhD degree from Swiss Federal Institute of Technology in Lausanne (EPFL) in Switzerland, with the prestigious EPFL Thesis Distinction Award. He was a postdoctoral researcher and then promoted as senior scientist in the Department of Health Science and Technology at ETH Zürich since 2020.

Dr. Zhou’s main research interests include the sustainable food proteins and their self-assemblies, including food protein nanofibrils, the fundamental mechanistic of protein aggregation at molecular and mesoscopic levels, and their applications in nutraceutical delivery, as well as in biomedical and functional materials.
