"Hi! I’m Aien, also known as Miya, a PhD student in Prof Zhou’s lab. We study sustainable food proteins by uncovering how they self-assemble and interact with bioactives at the micro- and nanoscale, aiming to design food structures that offer improved nutrition and functionality for a healthier future. My research focuses on functional foods and plant meat (need to be revised after discussion on the PhD project focus)."

Aien hold a master’s degree in Food Science from the National University of Singapore and a bachelor’s degree from Beijing Normal – Hong Kong Baptist University. Her previous work spans plant-based product development, high-pressure homogenization of milk alternatives, and microalgae protein extraction—experiences that fuel my interest in protein systems, soft materials, and functional food design.

Outside the lab, Aien is a photography enthusiast, and active advocate for sustainable diets and science outreach.
